WOULD YOU EAT THIS TREMENDOUS UNBELIEVABLE FISH BATTER
Ingredients:
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp baking soda
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 cup cold sparkling water (or cold club soda)
1 large egg, lightly beaten
Vegetable oil for frying
Instructions:
Prepare the Batter:
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, paprika, garlic powder, onion powder, salt, and black pepper.
Add Liquids:
Create a well in the center of the dry ingredients and pour in the cold sparkling water (or club soda) and the beaten egg.
Gently mix the ingredients until just combined. Be careful not to overmix; a few lumps are fine. The batter should be thick enough to coat the fish but still pourable.
Heat Oil:
Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat. The oil is ready when a small drop of batter sizzles and bubbles when dropped into the oil.
Coat and Fry the Fish:
Pat the fish fillets dry with paper towels.
Dip each fillet into the batter, allowing any excess to drip off.
Carefully lower the battered fish into the hot oil and fry until golden brown and crispy, about 4-5 minutes per side. The fish should be cooked through and reach an internal temperature of 145°F (63°C).
Drain and Serve:
Remove the fish from the oil and drain on paper towels.
Serve immediately with your favorite sides, such as fries, coleslaw, or tartar sauce.
