Chinese Chicken and Cabbage Stir-Fry

Ingredients:
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts or thighs, thinly sliced
3 cups shredded cabbage (green or a mix of green and purple)
1 medium carrot, julienned
1 red bell pepper, sliced
1/2 cup snow peas (optional)
3 cloves garlic, minced
1 tablespoon fresh ginger, minced or grated
3 green onions, sliced
1/4 cup soy sauce
2 tablespoons oyster sauce (optional)
1 tablespoon hoisin sauce
1 tablespoon rice vinegar or white vinegar
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (optional, to mix with cornstarch)
Salt and pepper to taste
Sesame seeds and additional sliced green onions for garnish (optional)

Instructions:
Prepare the Sauce:

In a small bowl, mix together the soy sauce, oyster sauce (if using), hoisin sauce, and rice vinegar. Set aside.
Cook the Chicken:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and season with a pinch of salt and pepper.
Cook the chicken for about 5-7 minutes, or until fully cooked and browned. Remove the chicken from the skillet and set it aside.
Stir-Fry the Vegetables:

In the same skillet, add the remaining tablespoon of vegetable oil.
Add the minced garlic and ginger, and cook for about 30 seconds, or until fragrant.
Add the shredded cabbage, carrots, bell pepper, and snow peas (if using). Stir-fry the vegetables for about 4-5 minutes, or until they start to soften but are still crisp.
Combine Chicken and Sauce:

Return the cooked chicken to the skillet with the vegetables.
Pour the prepared sauce over the chicken and vegetables, and toss everything together to coat evenly.
If you want a thicker sauce, mix the cornstarch with water to create a slurry and add it to the skillet. Cook for an additional 1-2 minutes, or until the sauce has thickened to your liking.
Finish and Serve:

Stir in the sliced green onions and cook for an additional 1-2 minutes.
Taste and adjust seasoning with salt and pepper if needed.
Garnish and Serve:

Serve the stir-fry hot, garnished with sesame seeds and additional sliced green onions if desired.
It pairs well with steamed rice or noodles.
